Pasta Salad with Spinach and Chickpeas

Pasta Salad with Spinach and Chickpeas

Cooking time: 15 min
Serves 1

1 portion (50-100g) wholegrain fusilli
50g frozen spinach
50g chickpeas
1/3 red chilli
1 garlic clove
1 tbsp olive oil
Grated cheddar (or other cheese)
Salt and black pepper

Boil the pasta.
Chop the chilli and garlic.
When it's about 3 minutes left before the pasta is ready, add the spinach to the boiling water.
Drain when ready.
Lower the heat, add olive oil to the empty pan and stir in chilli and garlic, for about 30 sec.
Add pasta, spinach and chickpeas to the pan. Stir and season with grated cheddar, salt and black pepper.
