Vegetable Noodles

Simple and fresh vegetable noodles
Cooking time: 15 min
Serves 2

2 portions wholegrain noodles
1 handful frozen peas
1 handful (frozen) spinach
2 carrots
3 spring onions
1 handful almonds
2 tbsp olive oil
1/3 chilli
Fresh ginger
Soy sauce
Salt


Put the noodles in a pan of boiling water.
Peel and grate the carrots.
Chop the spring onions, ginger, almonds and chilli.
When the noodles are nearly finished, add the peas and spinach to the boiling water.
Drain when ready.
Mix everything in a bowl. Add olive oil, soy sauce and salt and stir.

If you're hungry or need more protein, add an egg or two on top.
