Kidney Bean and Walnut Burger |
4 burgers
1 tin (400g) kidney beans
1 red onion
1/3 green chilli
1 dl (1/2 cup) walnuts
1 tsp soy sauce
Olive oil
Chili powder, salt and black pepper
Chop the onion and chilli and stir in olive oil in a hot pan.
Drain the kidney beans and mash them in a bowl.
Chop the walnuts and add to the beans.
Add the onion and chilli to the bowl. Season with soy sauce, chili powder and black pepper and mix well.
Form 4 burgers and place them in a medium hot frying pan with olive oil. Add a bit of butter and salt if you want. Turn the burgers over gently and leave until they're solid and got a bit of colour - about 5 min.
Great to serve with vegetables, homemade beetroot dip and a slice of cheddar cheese on a wholegrain bun.
